Аннотация. В данной статье исследуются широко распространенные в китайских кулинарных рецептах нечеткие единицы измерения, такие как «щепотка», «по вкусу», «слабоострый». Автор утверждает, что эти единицы являются не недостатком, а отражением глубинных особенностей традиционной китайской культуры, основанной на эмпирическом знании, принципах «единства дао и орудия» и «срединного пути». Цель исследования — выявить культурно-философские основы этой метрической системы и проанализировать вызовы, которые бросает ей современная эпоха стандартизации и цифровизации. В работе последовательно решаются задачи по выявлению культурного кода нечетких измерений, систематизации современных попыток их стандартизации (в промышленности, IT-сервисах, умной кухонной технике) и анализу противоречий между двумя парадигмами. Методология включает сравнительный анализ, культурно-исторический подход и case-study (на примере платформ типа «Сячуфан», брендов вроде «Лаоганьма»). Основной вывод заключается в том, что будущее китайской кулинарной метрологии лежит не в тотальном замещении нечеткости точностью, а в поиске гибкого симбиоза, при котором стандартизация обеспечивает воспроизводимость на массовом уровне, а традиционная «нечеткость» сохраняет пространство для творчества и адаптации. Научная новизна работы — в комплексном рассмотрении кулинарных измерений как точки пересечения философии, культурологии, экономики и высоких технологий

How Spicy is "Mildly Spicy"? The Cultural Connotation of Ambiguous Measurement Units in Chinese Recipes and Attempts at Standardization

Abstract. This article examines the ambiguous measurement units ubiquitous in Chinese culinary recipes, such as “a pinch,” “to taste,” and “mildly spicy.” The author argues that these units are not a flaw but a reflection of the profound features of traditional Chinese culture, based on empirical knowledge, the principles of the “unity of dao and instrument,” and the “Middle Way.” The study aims to identify the cultural and philosophical foundations of this metric system and analyze the challenges posed to it by the modern era of standardization and digitalization. The work consistently tackles the tasks of deciphering the cultural code of ambiguous measurements, systematizing modern attempts at their standardization (in industry, IT services, smart kitchen appliances), and analyzing the contradictions between the two paradigms. The methodology includes comparative analysis, a cultural-historical approach, and case studies (using examples like the “Xiachufang” platform, brands like “Lao Gan Ma”). The main conclusion is that the future of Chinese culinary metrology lies not in the total replacement of ambiguity with precision but in finding a flexible symbiosis where standardization ensures reproducibility at a mass level. In contrast, traditional “ambiguity” preserves space for creativity and adaptation. The scientific novelty of the work lies in the comprehensive consideration of culinary measurements as an intersection of philosophy, cultural studies, economics, and high technology.
